Celebrate the flavors of fall with this healthy, colorful, and easy-to-make Harvest Quinoa Salad! It’s packed with seasonal goodness, perfect for a quick lunch or a light dinner.

 

Ingredients (Serves 4–6):

  • 1 cup quinoa, rinsed
  • 2 medium sweet potatoes, peeled and cubed
  • 1–2 crisp apples, diced
  • ¼ cup dried cranberries
  • ¼ cup chopped walnuts or pecans (optional)
  • 3 cups mixed greens or baby spinach
  • 2–3 tbsp olive oil
  • 1 tbsp maple syrup or honey
  • 1 tbsp apple cider vinegar
  • Salt and pepper, to taste
  • ½ tsp cinnamon (optional, for sweet potato roasting)

 

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tbsp olive oil, cinnamon, salt, and pepper. Roast for 20–25 minutes until tender.
  2. While sweet potatoes roast, cook quinoa according to package directions. Let cool slightly.
  3. In a small bowl, whisk together the remaining olive oil, maple syrup, apple cider vinegar, salt, and pepper to make a simple dressing.
  4. In a large bowl, combine quinoa, roasted sweet potatoes, diced apples, dried cranberries, nuts, and greens. Drizzle with dressing and toss gently.
  5. Serve warm, at room temperature, or chilled. Enjoy!

 

Tip: Make extra for meal prep! This salad keeps well in the fridge for 2–3 days.
